Savory Italian sausage potato soup with onions, pancetta, and kale in a creamy chicken broth base.
Ingredients:
  • 1 pound Italian sausage
  • 0.75 cup chopped onion
  • 1 slice pancetta bacon, diced
  • 1.25 teaspoons garlic, minced
  • 1 cube chicken bouillon
  • 4 cups water
  • 2 potatoes, cubed
  • 2 cups kale, rinsed and julienned
  • 0.33333334326744 cup heavy cream
Instructions:
  • Preheat the oven to 300°F (150°C) before starting.
  • Arrange sausage links on a baking sheet and bake for 15 to 20 minutes until fully cooked. Slice each link in half lengthwise, then into 1/2-inch pieces. Reserve for later use.
  • Cook the onions and pancetta in a 4-quart saucepan over medium heat until the onions are translucent for about 10 minutes. Stir in the garlic and cook for an additional minute.
  • Combine bouillon, water, and potatoes in a pot and simmer for 15 minutes. Stir in kale, cream, and reserved sausage; simmer for an additional 5 minutes before serving.
