Savory Italian sausage and cheese-filled tortellini in a rich beef broth soup with carrots, celery, and zucchini. Top with Parmesan cheese.
Ingredients:
  • 1 pound Italian sausage
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 5 cups beef broth
  • 0.5 cup water
  • 0.5 cup dry red wine
  • 8 ounces fresh tortellini pasta
  • 1 cup sliced carrots
  • 2 cups stewed tomatoes
  • 8 ounces tomato sauce
  • 1.5 cups sliced zucchini
  • 2 green bell peppers, seeded and cubed
  • 3 tablespoons chopped fresh parsley
Instructions:
  • Remove the sausage casings and brown the sausage until crumbly in a pot. Set aside the cooked sausage and save 1 tablespoon of drippings.
  • Saute onion and garlic in the flavorful drippings until soft. Pour in broth, water, wine, carrots, tomatoes, basil, oregano, tomato sauce, and the cooked sausage. Bring to a boil, then lower the heat and let it simmer, uncovered, for 30 minutes.
  • Combine zucchini, green peppers, parsley, and tortellini in the pot. Simmer covered for 25 minutes if using fresh tortellini or 45 minutes if using frozen tortellini. Sprinkle fresh parmesan cheese on top before serving.
