Cheese tortellini cooked in flavorful broth, combined with tomatoes and beans for a quick and tasty soup ready in no time!
Ingredients:
  • 2 (14.5 ounce) cans chicken broth
  • 1 (16 ounce) package cheese tortellini
  • 1 (14.5 ounce) can Italian-style diced tomatoes
  • 1 (15.5 ounce) can white kidney beans (cannellini), rinsed and drained
  • 0.5 zucchini, sliced
  • 1 tablespoon red wine vinaigrette
  • 1 teaspoon basil
  • ground black pepper to taste
  • 0.25 cup grated Parmesan cheese, or to taste
Instructions:
  • In a large pot, bring the chicken broth to a boil. Add the tortellini and cook until tender, about 6 minutes.
  • Combine tomatoes, beans, zucchini, red wine vinaigrette, basil, and black pepper in the broth. Simmer until the zucchini is tender, approximately 6 minutes. Sprinkle with Parmesan cheese before serving.
