Quick and simple vegetarian pasta, ideal for Meatless Mondays or busy weeknight dinners.
Ingredients:
  • 1 (9 ounce) package refrigerated tortellini
  • 0.5 cup sliced portobello mushrooms
  • 2 cloves garlic, minced
  • 3 tablespoons butter
  • 0.5 cup evaporated fat-free milk
  • 0.75 cup freshly grated Parmesan cheese
  • 1 pinch ground black pepper
Instructions:
  • Fill a large pot with lightly salted water and bring to a rolling boil. Add tortellini and cook until they float to the top and the filling is hot, about 2 to 3 minutes.
  • In a skillet over medium-high heat, melt butter. Add sliced mushrooms and saute until tender, about 5 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Transfer mixture to a small bowl.
  • Pour the evaporated milk into a skillet and warm it over medium-low heat. Stir in the Parmesan cheese until it's all melted. Add the cooked tortellini and mix until well coated. Top it off with the mushroom-garlic mixture for an extra touch of flavor.
