Lighter green bean and portobello casserole - a modern twist on a classic favorite.
Ingredients:
  • nonstick cooking spray
  • 1 (8 ounce) package portobello mushrooms
  • 1 (10.75 ounce) can 98% fat-free condensed cream of mushroom soup
  • 0.25 cup fat-free half-and-half
  • 2 (14.5 ounce) cans cut green beans, drained
  • 0.25 teaspoon ground black pepper, or to taste
  • 0.125 teaspoon ground white pepper, or to taste
  • 1 (6 ounce) can crispy fried onions, divided
Instructions:
  • Preheat the oven to 350°F (175°C) and generously coat an 8x11-inch casserole dish with nonstick cooking spray.
  • Slice half of the portobello mushrooms and arrange them in the pan. Chop the other half and keep aside.
  • In a medium bowl, mix mushroom soup and half-and-half. Stir in chopped mushrooms, green beans, black pepper, white pepper, and half of the fried onions. Pour over sliced mushrooms in the casserole dish.
  • After baking for 35 minutes in the preheated oven, sprinkle the remaining fried onions on top. Bake for an additional 5 minutes. Let it cool slightly before serving.
