Lighter beef stroganoff with zucchini noodles for a healthier twist.
Ingredients:
  • 4.60 gm olive oil
  • 250g beef fillet, fat trimmed, thinly sliced
  • 1/2 white onion, thinly sliced
  • 100g Swiss brown mushrooms, halved or sliced
  • 100g button mushrooms, halved or sliced
  • 12.20 gm Worcestershire sauce
  • 100ml salt-reduced beef stock or Massel Beef Style Liquid Stock
  • 28.20 gm reduced-fat sour cream
  • 50g baby spinach
  • 250g pkt zucchini noodles
  • Steamed green beans, to serve
  • Baby parsley leaves, to serve
Instructions:
  • In a large non-stick frying pan, heat half of the olive oil over high heat. Sear the beef for 2 minutes until golden brown, then transfer to a plate.
  • In the same pan, heat the remaining oil over medium heat. Sauté the onion for about 5 minutes until softened. Increase heat to high, add mushrooms, and cook for 3-4 minutes until browned. Stir in garlic and paprika for about 1 minute until fragrant. Pour in Worcestershire sauce and stock, bring to a boil.
  • Lower the heat, add the beef back to the pan, and gently simmer for 1-2 minutes until heated through. Mix in the cream and spinach, cooking until the spinach wilts slightly.
  • Prepare the zucchini noodles according to package instructions in the microwave. Serve the beef alongside the zucchini noodles and steamed green beans, then garnish with a sprinkle of parsley.
