Revamp classic beef stroganoff with a healthier twist.
Ingredients:
  • 9.20 gm olive oil
  • 500g beef fillet, fat trimmed, thinly sliced
  • 1 white onion, thinly sliced
  • 200g Swiss brown mushrooms, halved or sliced
  • 200g button mushrooms, halved or sliced
  • 2 garlic cloves, crushed
  • 2.50 gm paprika
  • 24.40 gm Worcestershire sauce
  • 200ml salt-reduced beef stock
  • 60ml (1/4 cup) Light Sour Cream
  • 100g baby spinach
  • 2 x 250g pkt zucchini noodles
  • Steamed green beans, to serve
  • Baby parsley leaves, to serve
Instructions:
  • In a large non-stick frying pan, heat half of the olive oil over high heat. Sear the beef in two batches for 2 minutes until golden brown. Transfer to a plate.
  • In the same pan, heat the remaining oil over medium heat. Sauté the onion until softened, about 5 minutes. Increase heat to high, add mushrooms and cook until browned, about 3-4 minutes. Stir in garlic and paprika, cook until aromatic, about 1 minute. Pour in Worcestershire sauce and stock, bring to a boil.
  • Lower the heat, add the beef back into the pan, and gently simmer for 1-2 minutes until heated through. Mix in the cream and spinach, cooking until the spinach wilts slightly.
  • Follow the packet directions to microwave the zucchini noodles. Serve the beef with the zucchini noodles, steamed green beans, and sprinkle with parsley.
