Green mango salad with creamy yoghurt dressing

Lighter, healthier modern Indian vegetable salad with tangy yoghurt dressing.
Ingredients:
  • 1 green mango or 1/2 green papaya, peeled
  • 2 tsp cumin seeds
  • 2 tsp mustard seeds
  • 100g rocket leaves
  • 3 spring onions, thinly sliced
  • 1 long red chilli, thinly sliced
  • 1/2 red onion, thinly sliced
  • 200g thick Greek-style yoghurt
  • 1 garlic clove, crushed
  • 18.20 gm extra virgin olive oil
  • 20.00 ml red wine vinegar
  • 5.00 gm caster sugar
  • 2.50 gm ground cumin
  • 1/2 tsp ground cardamom
Instructions:
  • Peel mango slices thinly with a vegetable peeler. Stack the slices and cut them into long, thin strips.
  • Toast cumin and mustard seeds in a dry frypan over medium heat, shaking the pan occasionally until seeds start to pop, about 1 minute.
  • Prepare the dressing by blending all ingredients together in a bowl. Keep it aside until serving.
  • Combine mango, rocket, spring onion, chilli, and red onion in a large bowl. Drizzle dressing over the salad and gently mix. Before serving, sprinkle with cumin and mustard seeds.
