Tropical fruit salad in green tea syrup

Elevate your tropical fruit salad with a hint of green tea's unique flavor.
Ingredients:
  • 2 ripe mangoes
  • 12 fresh lychees, peeled
  • 1/2 honeydew melon, deseeded, peeled, thinly sliced
  • 1 orange
  • 125ml (1/2 cup) water
  • 70g (1/3 cup) caster sugar
  • 2 green tea bags
  • 2 green cardamom pods, bruised
Instructions:
  • Separate the mango cheeks from the seed and peel off the skin. Cut the flesh into long slices. Combine in a big heatproof bowl with the lychees and honeydew melon.
  • Zest the orange using a zester, then juice the orange. In a saucepan over low heat, combine the orange zest, orange juice, water, sugar, tea bags, and cardamom pods. Cook and stir occasionally for 5 minutes until sugar dissolves. Pour the syrup over the fruit, cover with plastic wrap, and chill in the fridge for 1 hour to enhance flavors.
  • Strain out the tea bags and cardamom pods from the fruit salad. Serve the fruit in glasses, drizzle with green tea syrup, and enjoy right away.
