Pineapple Cucumber Salad

Tropical fruit and crisp veggies tossed in zesty dressing make a vibrant, tangy salad.
Ingredients:
  • 0.5 pineapple - peeled, cored, and cut into chunks
  • 1 English cucumber, quartered lengthwise and cut into chunks
  • 2 green onions, thinly sliced
  • 3 tablespoons finely chopped fresh cilantro
  • 3 tablespoons finely chopped fresh mint
  • 3 tablespoons sweet chili sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons fresh lime juice
  • 1 lime, zested
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar, or to taste
Instructions:
  • Combine the pineapple, cucumber, green onions, cilantro, and mint in a large mixing bowl.
  • Combine chili sauce, sesame oil, lime juice, lime zest, and fish sauce in a bowl and whisk until well mixed. Gradually whisk in brown sugar, 1 teaspoon at a time, until desired sweetness is reached. Pour the chili dressing over the pineapple mixture and toss to combine.
