Succulent pork with spicy salsa on a bed of snow pea and cucumber salad.
Ingredients:
  • 4 (about 125g each) pork loin steaks
  • 250g snow peas, trimmed, halved diagonally
  • 2 Lebanese cucumbers, halved lengthways, thinly sliced diagonally
  • 1/2 (about 500g) pineapple, peeled, core removed, cut into 5mm pieces
  • 1 long fresh red chilli, deseeded, finely chopped
  • 40.00 ml chopped fresh coriander
  • 21.00 gm fresh lime juice
  • 6.10 gm fish sauce
Instructions:
  • Prepare a flavorful pineapple salsa by mixing juicy pineapple chunks, spicy chili, fresh coriander, tangy lime juice, and savory fish sauce in a small bowl.
  • Heat up your barbecue grill or chargrill on high. Lightly spray both sides of the pork with olive oil. Grill for 4 minutes on each side for medium doneness or until it reaches your desired level of doneness. Place the pork on a plate, cover it with foil, and let it rest for 2-3 minutes before serving.
  • Boil the snow peas in a large saucepan for 2-3 minutes until vibrant green and slightly crisp. Run under cold water, then mix with cucumber in a bowl.
  • Plate the snow pea mixture evenly on serving plates, then layer with the pork and salsa. Serve promptly to enjoy fresh.
