Easy slow cooker Asian-style classic with sweet, tangy, and spicy flavors from brown sugar, vinegar, and chili.
Ingredients:
  • 8 pork scotch fillet steaks
  • 2 red onions, cut into wedges
  • 86.63 gm soy sauce
  • 85.80 gm tomato sauce
  • 32.00 gm firmly packed brown sugar
  • 40.00 ml white vinegar
  • 1/4 tsp dried chilli flakes
  • 440g can pineapple pieces in natural juice, juice reserved
  • 1 green capsicum, roughly chopped
  • 1 red capsicum, roughly chopped
  • 20.00 gm cornflour
  • 2 green onions, thinly sliced diagonally
  • Steamed jasmine rice, to serve
Instructions:
  • In a large frying pan over high heat, sear batches of pork in hot oil for 1 to 2 minutes per side until nicely browned.
  • In a 4.5 litre-capacity slow cooker, combine red onion, sauces, sugar, vinegar, chilli, garlic, pineapple, reserved pineapple juice, capsicums, and cornflour. Add pork to the cooker. Cover and cook on LOW for 4 hours.
  • Garnish with fresh green onion and enjoy with fluffy, steamed rice.
