Slow-Cooker Pork with Sweet-Sour Red Cabbage

German-inspired pork, cabbage, and apple dish for a year-round Oktoberfest vibe.
Ingredients:
  • 4 cups shredded red cabbage
  • 1 medium onion, thinly sliced
  • 1 medium apple, peeled and chopped (1 cup)
  • 1/2 cup packed brown sugar
  • 1/2 cup cider vinegar
  • 1 teaspoon salt
  • 2 1/2- to 3-pound pork boneless shoulder roast
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. Combine cabbage, onion, apple, brown sugar, vinegar, and 1/2 teaspoon salt in the cooker.
  • Prepare a 12-inch nonstick skillet by spraying it with cooking spray. Keep the netting or ties on the pork roast if they are present. Sprinkle the pork with the remaining 1/2 teaspoon of salt. Cook the pork in the skillet over medium-high heat for 5 to 6 minutes, turning occasionally, until it is browned on all sides. Transfer the pork onto the cabbage mixture.
  • Slow cook covered on Low heat for 7 to 9 hours.
  • Discard any netting or strings from the pork. Serve the pork alongside the cabbage.
