Transport your taste buds to the Philippines with this easy slow cooker pork and pineapple adobo. Enjoy tender pork infused with sweet pineapple and tangy vinegar for a mouthwatering tropical dish. Ingredients:
  • 18.40 gm vegetable oil
  • 1kg pork shoulder, cut into 3-4cm pieces
  • 3 fresh or dried bay leaves
  • 1 tsp black peppercorns
  • 440g can pineapple pieces in juice
  • 80ml (1⁄3 cup) gluten-free soy sauce
  • 80ml (1/3 cup) white wine vinegar
  • 1 brown onion, chopped
  • 5 garlic cloves, crushed
  • Sliced green shallots, to serve
  • Steamed white rice, to serve
Instructions:
  • In a large frying pan over medium-high heat, heat oil until shimmering. Brown the pork in batches for about 5 minutes per batch, then transfer to a slow cooker along with bay leaves and peppercorns.
  • Reserve 80ml (1 ⁄3 cup) of pineapple juice. Mix the pineapple juice, soy sauce, and vinegar in a bowl.
  • Saute the onion in a touch more oil, if needed, over medium heat until soft, about 5 minutes. Add garlic and cook for 30 seconds until fragrant. Pour in the juice mixture, bring to a boil, and stir until well combined.
  • Transfer the mixture into the slow cooker and gently stir until well combined. Cover and cook on Low for about 5 hours and 45 minutes, or until tender.
  • Heat a small non-stick frying pan over medium heat. Add pineapple pieces and cook for 1 minute on each side until they turn golden.
  • Place the pineapple pieces in the slow cooker and cook covered for 5 minutes or until warmed. Season with salt, add shallots, and transfer to serving bowls. Enjoy with rice.
