Slow cooker Asian meatballs with ground pork and pineapple, perfect over coconut rice.
Ingredients:
  • 1 fresh pineapple
  • 1 pound ground pork
  • 0.5 cup panko bread crumbs
  • 1 large egg
  • 2 tablespoons minced fresh ginger root
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 0.5 cup water
  • 3 tablespoons teriyaki sauce
  • 0.5 teaspoon cornstarch
  • 2 tablespoons chopped green onion, or more to taste
  • 1 teaspoon sesame seeds, or to taste
Instructions:
  • Mix ground pork, bread crumbs, egg, ginger, soy sauce, and garlic in a large bowl for the meatballs. Gently knead the mixture with your fingers until combined. Cover and refrigerate for 2 hours to enhance the flavors.
  • Peel the pineapple and slice into 3/4-inch rings. Remove the core from each ring and cut into 1-inch wedges (approximately 1 1/2 cups). Transfer the pineapple to the slow cooker.
  • Shape the pork mixture into 12 to 16 flavorful balls and gently nestle them into the waiting slow cooker.
  • Mix water, teriyaki sauce, and soy sauce in a small bowl, then drizzle over the meatballs, ensuring they are partially submerged.
  • After covering the slow cooker, let the delicious dish cook gently for 4 to 6 hours on Low or 3 hours on High. Use a slotted spoon to transfer the succulent pineapple and pork balls to a serving bowl.
  • Whisk cornstarch into the sauce until well combined. Return pineapple and meatballs to the slow cooker and simmer until sauce thickens, about 30 minutes. Serve in a bowl topped with green onions and sesame seeds.
