Spicy Asian-inspired meatloaf served with a refreshing noodle salad for a simple and delicious dinner.
Ingredients:
  • 600g pork mince
  • 62.50 ml char siu sauce (see note)
  • 2 garlic cloves, crushed
  • 125.00 ml finely chopped fresh coriander leaves
  • 1 small red chilli, deseeded, finely chopped
  • 225g can sliced bamboo shoots, drained, finely chopped
  • 250g dried rice vermicelli noodles
  • 2 lemons, peeled
  • 125.00 ml fresh mint leaves, torn
  • 125.00 ml fresh coriander leaves, torn
  • 1 Lebanese cucumber, halved, thinly sliced
Instructions:
  • Preheat your oven to 200°C and generously grease 4 of the 6 holes in a large 3/4 cup texas muffin pan.
  • Mix together the mince, 2 tablespoons of char siu sauce, garlic, fish sauce, coriander, chili, and bamboo shoots in a bowl.
  • Spoon mixture into muffin holes, then brush tops with leftover char sui sauce. Bake for 25 minutes or until fully cooked. Let meatloaves sit in pan for 5 minutes before serving.
  • To prepare the herb and noodle salad, place the noodles in a heatproof bowl and cover them with boiling water. Let them sit for 5 minutes until tender, then drain and rinse under cold water. Return the noodles to the bowl and cut them into 8cm lengths. Segment the lemons over the noodles, then add the mint, coriander, cucumber, and oil. Gently toss everything together to combine.
  • Carefully remove meatloaves from the muffin tin. Enjoy alongside a refreshing noodle salad.
