Make mini Japanese savory pancakes using an air fryer and egg rings. Top with tonkatsu sauce and mayo for a flavor explosion. Ideal for canapes or snacks.
Ingredients:
  • 150g (1 cup) plain flour
  • 4 eggs
  • 42.00 gm soy sauce
  • 60ml (¼ cup) dashi stock or vegetable stock
  • 750.00 ml shredded wombok (Chinese cabbage) or green cabbage
  • 1 carrot, peeled, coarsely grated
  • Canola oil spray
  • Tonkatsu sauce, to serve
  • Kewpie mayonnaise, to serve
  • Pickled ginger, to serve
  • Sliced green shallot, to serve
  • Toasted sesame seeds, to serve
Instructions:
  • In a large bowl, combine flour, eggs, soy sauce, dashi stock, cabbage, and carrot. Mix well and season to taste.
  • Prepare the air-fryer by placing 4 egg rings in the basket and giving them a quick spray of oil. Fill each ring with about 80ml (⅓ cup) of the cabbage mixture and air fry at 180C for 8 minutes. Once done, transfer to a plate to keep warm. Repeat the process with the rest of the cabbage mixture, spraying the air fryer each time before adding the mixture.
  • Drizzle tonkatsu sauce and mayonnaise over pancakes, then use a skewer to create a decorative pattern. Garnish with pickled ginger, sliced spring onions, and sesame seeds to taste.
