Slow-Cooker Pork and Pineapple on a Stick

Effortlessly prepare and keep warm a crowd-pleasing dish in the slow cooker for easy party enjoyment.
Ingredients:
  • 1 1/2 lb boneless pork loin, trimmed of fat, cut into about 3/4-inch pieces
  • 1/4 cup hoisin sauce
  • 1 clove garlic, minced
  • 1 can (8 oz) pineapple chunks in juice, drained, 2 tablespoons juice reserved
  • 1/4 cup barbecue sauce
  • 1/4 cup Chinese plum sauce
  • 1 large green bell pepper, seeded, cut into about 3/4-inch pieces
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. Combine pork, hoisin sauce, garlic, and 2 tablespoons of reserved pineapple juice in the slow cooker, ensuring the pork is evenly coated. (Save the remaining pineapple in the refrigerator for later use.)
  • Cover and simmer on Low for 4 to 5 hours.
  • 40 minutes before serving, drain cooking juices from slow cooker. Combine barbecue sauce and plum sauce in a small bowl. Pour sauce over pork and mix gently to coat. Add pineapple chunks and sprinkle with bell pepper.
  • Turn the heat setting to High and let it simmer covered for an additional 25 to 30 minutes until the pork is beautifully glazed.
  • Stir the pork mixture delicately. Serve with wooden picks or skewers to spear the pork, pineapple, and bell pepper pieces. Keep warm in the slow cooker on Low setting for up to 2 hours if needed.
