Slow-Cooker Thai Style Ribs

Delicious Thai-style sweet and sour pork ribs, cooked low and slow. Perfect for an Asian-inspired feast!
Ingredients:
  • 3 1/2 lb pork baby back ribs, cut in half across bones
  • 1 can (11.5 oz) frozen orange-pineapple-apple juice concentrate, thawed
  • 3/4 cup soy sauce
  • 1/4 cup finely chopped fresh cilantro
  • 1/4 cup creamy peanut butter
  • 2 tablespoons finely chopped gingerroot
  • 2 teaspoons sugar
Instructions:
  • Place the ribs in a large shallow dish or a resealable freezer plastic bag.
  • In a small bowl, whisk together the ingredients. Set aside 3/4 cup of the sauce for dipping, then refrigerate. Pour the rest of the sauce over the ribs, cover, and refrigerate for 8 hours, turning occasionally.
  • Prepare the slow cooker by spraying it with cooking spray. Take the ribs out of the marinade and discard the marinade. Arrange one rack of ribs at the bottom of the slow cooker and stand the remaining racks on their sides around the edge. Cover and cook on High for 1 hour, then reduce the heat to Low and cook for an additional 5 hours.
  • Microwave the 3/4 cup of sauce in a 1-cup microwavable measuring cup on High for 1 to 1 1/2 minutes, stirring once, until fully heated. Serve the sauce with the ribs.
