Try this delicious slow-cooked sweet and sour pork for a satisfying dinner.
Ingredients:
  • 1 1/2 lb. boneless pork loin, cut into cubes
  • 1 can (8 oz) pineapple tidbits, in unsweetened juice, undrained
  • 1 medium red or green bell pepper, cut into squares
  • 3 tablespoons brown sugar
  • 1/2 teaspoon ginger
  • 1/4 cup vinegar
  • 3 tablespoons soy sauce
  • 2/3 cup uncooked regular long-grain white rice
  • 1 1/3 cups water
  • 3 tablespoons water
  • 2 tablespoons cornstarch
Instructions:
  • Place pork, pineapple, bell pepper, brown sugar, ginger, vinegar, and soy sauce in a 3 1/2 to 4-quart slow cooker and stir until combined.
  • Cover and let it simmer on low heat for 6 to 8 hours.
  • Prepare the rice according to the package instructions, 25 minutes before serving, using 1 1/3 cups of water.
  • Just before serving, mix 3 tablespoons of water with cornstarch in a small bowl until smooth. Stir this mixture into the pork in the slow cooker. Cook on high for 5 minutes until sauce thickens. Serve the pork over rice.
