Thai pork salad with pineapple

Tangy Asian salad with sweet pineapple for a burst of flavor and Vitamin C boost.
Ingredients:
  • 4 pork loin medallions
  • Olive oil spray
  • 1/2 pineapple, peeled, cored, halved lengthways, thinly sliced
  • 200g grape tomatoes, halved lengthways
  • 2 Lebanese cucumbers, peeled, halved lengthways, thinly sliced
  • 80g (2 cups) watercress sprigs
  • 165.00 ml fresh coriander sprigs
  • 42.00 gm fresh lime juice
  • 22.00 gm sweet chilli sauce
  • 1 garlic clove, crushed
  • 1 tsp finely grated fresh ginger
  • 3.05 gm fish sauce
Instructions:
  • Heat a frying pan over medium heat. Spray pork with olive oil, season with salt and pepper, then cook for about 3 minutes per side for medium doneness. Rest on a plate covered with foil for 3 minutes before serving.
  • Prepare the dressing by mixing lime juice, sweet chili sauce, garlic, ginger, and fish sauce in a small bowl.
  • Slice the pork thinly against the grain. Combine the pork, pineapple, tomato, cucumber, watercress, and coriander in a large bowl. Drizzle the dressing over the mixture and toss well to combine. Serve the salad in individual bowls. Enjoy!
