Succulent pork fillet steak with vibrant Thai red curry dressing served over crisp salad.
Ingredients:
  • 500g pork scotch fillet steak
  • 100g curry paste
  • 18.20 gm peanut oil
  • 125ml coconut cream
  • 1 green oak leaf lettuce, leaves separated
  • 1 red capsicum, seeded, thinly sliced
  • 4 Qukes Baby Cucumbers, thinly sliced lengthways
  • 125.00 ml basil leaves
  • 82.50 ml coriander leaves
  • 1 red onion, thinly sliced
  • 1 long red chilli, sliced (optional)
Instructions:
  • Rub half of the curry paste onto the pork. In a medium frying pan over medium-high heat, heat oil. Cook the pork for 4 minutes on each side until browned and fully cooked. Place the pork on a plate and cover with foil. Let it rest for 5 minutes before slicing.
  • In a small bowl, combine the remaining curry paste and coconut cream, whisking until smooth.
  • Place a bed of fresh lettuce leaves on a beautiful serving platter. Layer with crunchy capsicum, refreshing cucumber, savory pork, fragrant basil, zesty coriander, crisp onion, and spicy chili if desired. Finish by elegantly drizzling the dressing over the top just before serving.
