Pork & peanut dip

Thai-style pork mince dip with coconut, coriander, and lemongrass is bold and aromatic.
Ingredients:
  • 9.20 gm peanut oil
  • 1 stem lemon grass, pale section only, finely chopped
  • 2 fresh coriander roots, finely chopped
  • 2 garlic cloves, finely chopped
  • 150g pork mince
  • 250ml (1 cup) coconut cream
  • 70g (1/4 cup) crunchy peanut butter
  • 32.00 gm brown sugar
  • 12.20 gm fish sauce
  • 10.60 gm soy sauce
  • White pepper
  • Long fresh red chilli, sliced, to serve
  • Wonton wrappers, deep-fried, to serve
Instructions:
  • In a medium saucepan, warm up the oil over gentle heat. Stir in the lemongrass, coriander root, and garlic until softened, about 1 minute.
  • Turn the heat up to high. Cook the pork while stirring for 5 minutes until it changes color. Add coconut cream and peanut butter, then lower the heat to simmer for 20 minutes until oil rises to the surface. Stir in sugar, fish sauce, and soy sauce. Season with white pepper. Transfer to a bowl, top with chili, and serve with wonton wrappers.
