Pork dumplings recipe

Master easy Asian pork dumplings with spicy ginger soy dip.
Ingredients:
  • 250g Pork Mince
  • 250.00 ml finely shredded wombok (Chinese cabbage)
  • 1 garlic clove, finely chopped
  • 3cm-piece ginger, finely grated
  • 48.80 gm oyster sauce
  • 3 spring onions, thinly sliced
  • 25 wonton wrappers
  • 3 tsp sesame oil
  • 185ml chicken stock
  • 5cm-piece ginger, extra, peeled, cut into matchsticks
  • 42.00 gm light soy sauce
  • 40.00 ml rice wine vinegar
  • 5.20 gm chilli sauce (optional)
Instructions:
  • In a mixing bowl, mix together the mince, wombok, garlic, grated ginger, oyster sauce, and two-thirds of the spring onion. Season the mixture. On a clean work surface, lay out the wonton wrappers. Spoon 1 1/2 tsp of the mince mixture into the center of each wrapper. Moisten the edges with a bit of water. Fold the corners together to seal the filling inside, pinching the centers to secure.
  • Heat 1 tsp of oil in a hot frying pan until smoking. Place half of the dumplings in the pan and cook on medium heat for 2 mins until golden brown on the bottom. Pour in half of the stock, cover, and cook for 2-3 mins until dumplings are done. Repeat with the remaining oil, dumplings, and stock.
  • In a small bowl, mix together the ginger matchsticks, soy sauce, vinegar, chili sauce (if using), sugar, remaining spring onion, and remaining oil. Serve with dumplings.
