Asian fusion pork noodle bowl with a Thai curry twist - a flavorful and satisfying dish.
Ingredients:
  • 1 teaspoon ginger paste
  • 12 ounces refrigerated chow mein noodles
  • 0.25 cup soy sauce
  • 1 tablespoon honey, or to taste
  • 1.5 teaspoons fish sauce
  • 1 tablespoon vegetable oil
  • 2 tablespoons red curry paste
  • 1 tablespoon chopped garlic
  • 1 (13.5 ounce) can coconut milk
  • 1.5 pounds boneless pork loin chops, cut into thin strips
  • 1 cup julienned carrots
  • 1 (8 ounce) package sugar snap peas
  • 0.25 cup chopped fresh cilantro, or to taste
  • 0.5 lime, zested and juiced
Instructions:
  • Boil a pot of salted water and cook noodles until al dente, about 2 minutes. Drain and set aside.
  • In a small bowl, mix together soy sauce, honey, and fish sauce until well combined; set aside.
  • Preheat a large nonstick skillet over medium heat for 1 to 2 minutes. Drizzle in vegetable oil. Sauté curry paste, garlic, and ginger paste until aromatic, around 1 minute. Slowly incorporate coconut milk, stirring continuously to maintain a smooth sauce.
  • Cook pork strips, carrots, and snap peas until pork is cooked through, about 5 minutes. Combine drained noodles with soy sauce mixture in the skillet and simmer until sauce thickens, 4 to 5 minutes.
  • Portion the pork and noodle mixture into individual serving bowls and generously garnish with fresh cilantro, lime zest, and a splash of lime juice. Enjoy while hot.
