Family-friendly fruit salad, bursting with freshness and flavor.
Ingredients:
  • 650g ripe papaya, peeled, deseeded
  • 600g pineapple, peeled, cored
  • 100ml fresh orange juice
  • 20.00 ml finely grated lime rind
  • 60ml (1/4 cup) fresh lime juice
  • 32.00 gm brown sugar
  • Low-fat vanilla yoghurt, to serve
  • Mint leaves, to serve
Instructions:
  • Slice the papaya and pineapple into 2cm-thick slices and arrange them beautifully in a glass dish.
  • In a saucepan, combine orange juice, lime rind, lime juice, and sugar. Stir over medium heat until the sugar dissolves. Let it come to a boil, then simmer for 3-4 minutes until the syrup thickens. Pour the syrup over the fruit and let it sit for 30 minutes to enhance the flavors.
  • Ladle the fruit and syrup into individual serving bowls, then garnish with yogurt and fresh mint leaves before serving.
