Betty's quick and comforting Tortellini Soup is a weeknight winner, packed with chicken, veggies, and Italian flavors. Ready in just 45 minutes, it's a cozy and hearty dish the whole family will love.
Ingredients:
  • 2 tablespoons butter
  • 2 medium carrots, peeled and chopped (1 cup)
  • 2 medium celery stalks, chopped (1/2 cup)
  • 1 medium onion, chopped (1/2 cup)
  • 2 garlic cloves, finely chopped
  • 2 cartons (32 oz each) Progresso™ reduced-sodium chicken broth (8 cups)
  • 1 package (9 oz) refrigerated cheese-filled tortellini
  • 1 cup chopped cooked chicken
  • 2 cups lightly packed fresh baby spinach leaves
  • 2 tablespoons chopped fresh Italian (flat-leaf) parsley
  • Freshly grated Parmesan cheese
Instructions:
  • In a 4-quart saucepan over medium-high heat, melt butter until sizzling. Add carrots, celery, and onion; sauté for 6 to 8 minutes until they start to brown. Mix in garlic and cook for 30 seconds.
  • Add the broth and bring to a boil. Lower the heat and carefully mix in the tortellini and chicken. Let it simmer for 7 to 9 minutes, stirring occasionally, until the tortellini are tender.
  • Mix in the vibrant spinach, fresh parsley, and a dash of pepper. Finish by generously adding a sprinkle of cheese on top of each serving.
