Italian Tortellini Soup - Easy and comforting after a busy day.
Ingredients:
  • 2 cups low-sodium chicken broth
  • 0.66666668653488 cup water
  • 0.5 (16 ounce) package frozen cheese tortellini
  • 1 cup chopped watercress
  • 2 scallions, sliced
  • 3 drops hot red pepper sauce
  • 2 tablespoons grated Romano cheese
Instructions:
  • Combine the broth and water in a pot, then bring to a boil.
  • Add frozen tortellini to the flavorful broth and cook until the tortellini rises to the surface and the filling heats through, which should take approximately 6 to 8 minutes. Mix in watercress and scallions and cook until the watercress wilts, for about 2 minutes. Finish off with a splash of hot pepper sauce.
  • To finish, generously dust with Romano cheese and freshly cracked black pepper before serving.
