Indulge in a comforting, cheesy, and piping hot twist on traditional pasta bake for the perfect cozy night meal.
Ingredients:
  • 630g pkt ricotta & roast vegetable tortellini
  • 80g (1/2 cup) frozen peas
  • 1 red onion, halved, thinly sliced
  • 150g sliced leg ham, coarsely chopped
  • 300ml ctn thickened cream
  • 5.00 gm cornflour
  • 20.00 gm water
  • 100g (1 cup) shredded cooked chicken
  • 40g (1/2 cup) coarsely grated smoked cheddar
  • 55g (3/4 cup) fresh breadcrumbs
Instructions:
  • Preheat the oven to 200°C. Follow the package directions to cook tortellini in a large saucepan of salted boiling water. Add peas during the last 30 seconds of cooking. Drain and return everything to the pan.
  • Heat oil in a saucepan over medium-high heat. Sauté onion and ham until onion softens, about 5 minutes. Pour in cream and bring to a boil, then reduce heat to low. In a small bowl, mix cornflour and water, then stir into the pan. Cook until the sauce thickens, about 5 minutes. Season with pepper.
  • Combine the sauce and chicken with the tortellini, then place the mixture in a 2L (8-cup) baking dish. Top with cheddar and breadcrumbs before baking until golden, about 20 minutes.
