Savory skillet chicken hash with crispy hash browns and melted smoked Cheddar - a comforting dish for any meal.
Ingredients:
  • 0.25 cup butter
  • 0.25 cup olive oil, or more as needed
  • 1 (16 ounce) package frozen diced hash brown potatoes (such as Ore-Ida®), thawed
  • 3 skinless, boneless chicken breast halves, diced
  • 1 green bell pepper, chopped
  • 0.25 cup chicken broth, or more as needed
  • 1 pinch Montreal-style steak seasoning, or to taste
  • 1 pinch garlic powder, or to taste
  • 1 pinch seasoned salt, or to taste
  • 1 bunch broccolini, chopped
  • 1 cup shredded smoked Cheddar cheese
Instructions:
  • Combine butter and olive oil in a large frying pan over medium heat until melted. Sauté potatoes, chicken, onion, green bell pepper, chicken broth, steak seasoning, garlic powder, and seasoned salt until chicken is cooked through and liquid has evaporated, about 15-20 minutes. Add more olive oil if needed for moisture.
  • Mix broccolini and sharp Cheddar cheese into the chicken hash; cook until broccolini is tender and Cheddar cheese is melted, about 2 to 3 minutes.
