Savory chicken and hash brown casserole topped with crispy fried onions and melty cheese. A hearty and comforting dish that's perfect for a quick and delicious meal, loved by all, and great for leftovers.
Ingredients:
  • 3 cups shredded hash brown potatoes
  • 1 (6 ounce) can French-fried onions, divided
  • 6 slices processed American cheese
  • 4 skinless, boneless chicken breast halves - cut into bite size pieces
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 0.75 cup milk
  • 1 (15 ounce) can corn
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect baking temperature.
  • Combine hash browns and half of the onions in a 9x13 inch baking dish. Top with cheese slices, then arrange chicken over the cheese. In a small bowl, stir together soup and milk, and pour over the chicken.
  • Bake the chicken in a preheated oven for 30 to 35 minutes, until it's cooked through and the juices run clear. Add corn, stir to combine, and bake for another 20 minutes.
  • Finish by generously scattering the remaining onions on top before baking for an additional 5 minutes, or until they turn a glorious golden brown. Allow the dish to rest for 5 minutes before serving to allow the flavors to meld.
