Country Chicken and Biscuits

Classic chicken and vegetable casserole with fluffy biscuits, reminiscent of grandma's cooking.
Ingredients:
  • 6 cups cut-up cooked chicken
  • 1 1/4 cups chopped onions
  • 1 1/4 cups chopped celery stalks
  • 1 bag (12 oz) frozen mixed vegetables
  • 3 1/2 cups Progresso™ chicken broth (from 32-oz carton)
  • 1/3 cup cornstarch
  • 3/4 cup cold water
  • 2 tablespoons chopped fresh parsley
  • 3 1/3 cups Original Bisquick™ mix
  • 1 cup milk
Instructions:
  • Preheat the oven to 400°F. In a 5-quart Dutch oven, bring chicken, onions, celery, mixed vegetables, and chicken broth to a boil. Mix cornstarch with cold water until dissolved, then stir into the chicken mixture. Bring to a boil, stirring constantly, and let it boil for 1 minute. Remove from heat, stir in parsley, and pour the mixture into an ungreased 13x9x2-inch rectangular pan.
  • Mix Bisquick and milk together until it forms a soft dough. Drop 30 teaspoonfuls of the dough onto the chicken mixture.
  • Bake until biscuits turn a lovely golden brown, about 25 to 30 minutes.
