Indulge in comforting chicken and mushroom pot pie with creamy mixed vegetable filling.
Ingredients:
  • 1 cup boiling water
  • 1 cube chicken bouillon
  • 2 tablespoons butter, divided
  • 1 large onion, sliced
  • 1 pint white button mushrooms, sliced
  • 4 (5 ounce) skinless, boneless chicken breasts, cubed
  • 1 tablespoon Worcestershire sauce
  • ground black pepper to taste
  • 0.75 cup milk
  • 0.25 cup water
  • 1 cup frozen mixed vegetables (carrots, corn, peas)
  • 2 teaspoons cornstarch
  • 1 (14 ounce) package pastry for double-crust pie
  • 1 large egg yolk, beaten
Instructions:
  • In a liquid measure, mix 1 cup of boiling water with chicken bouillon and let it dissolve.
  • Melt 1 tablespoon of butter in a pot over medium heat until it's bubbling. Cook onions until they're soft and see-through, which usually takes about 5 minutes. Turn up the heat to medium-high, toss in the mushrooms, and stir-fry them for around 3 minutes. Spoon out the flavorful onion-mushroom mix from the pot.
  • In the pot with the chicken pieces, incorporate the rest of the butter. Stir well and generously sprinkle Worcestershire sauce on top. Sear the chicken on all sides by stirring constantly for about 3 minutes. Introduce the onion-mushroom mix, bouillon, and pepper, stirring to combine.
  • Pour in the milk and 1/4 cup of water; simmer for 20 minutes. Stir in the frozen vegetables and simmer for an additional 10 minutes.
  • Preheat the oven to 400°F (200°C). Grease an 8-inch oven-proof dish and place the bottom crust inside. Set the top crust aside.
  • After 10 minutes of boiling, take out about 1 cup of the sauce using a large ladle and transfer it to a cup. Mix in cornstarch until smooth. Pour this mixture back into the pot, cook and stir until the filling reaches your desired thickness.
  • Place the bottom crust in the preheated oven for about 5 minutes. Take it out, fill with your delicious filling, cover with the top crust, seal the edges neatly. Create charming decorations with pastry cut-offs, make small slits on top to release steam, and delicately brush egg yolk over the crust.
  • Bake until beautifully golden brown, approximately 15 to 20 minutes, keeping a close eye on it due to varying oven temperatures.
