Bake disks of smoked Cheddar, eggs, and chicken to create crispy keto taco shells.
Ingredients:
  • 1 (12.5 fl oz) can canned chicken breast (such as Trader Joe's®)
  • 2 large eggs
  • 0.5 cup shredded smoked Cheddar cheese
  • 1 teaspoon taco seasoning mix, or more to taste
Instructions:
  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Thoroughly drain canned chicken, ensuring it's dry. Spread chicken on the baking sheet.
  • Bake in the preheated oven for 10 minutes until dried.
  • Place the chicken in a bowl and preheat the oven to 500°F (260°C).
  • Combine eggs, sharp Cheddar cheese, and savory taco seasoning with the chicken.
  • Divide the mixture into 4 equal portions and shape each into tortilla-sized circles on the baking sheet.
  • Bake in the oven until perfectly cooked, about 8 to 10 minutes.
