Juicy keto chicken fritters - crispy outside, tender inside. Perfect for a quick and delicious family dinner!
Ingredients:
  • 1 pound skinless, boneless chicken thighs, cut into halves
  • 0.5 teaspoon salt
  • 0.5 teaspoon paprika
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon garlic powder
  • 0.5 cup shredded mozzarella cheese
  • 2 tablespoons mayonnaise
  • 1 egg, lightly beaten
  • 2 green onions, minced
  • 2 tablespoons plain unsweetened protein powder (such as Isopure®)
  • 2 tablespoons olive oil, divided
Instructions:
  • Add the chicken pieces, salt, paprika, pepper, and garlic powder to a food processor. Pulse until the meat is coarsely chopped into 1/4- to 1/2-inch pieces. Be careful not to overprocess.
  • Combine chicken mixture with mozzarella cheese, mayonnaise, egg, and green onions in a bowl. Sprinkle protein powder over the mixture and mix until evenly combined. Let sit for 20 to 30 minutes to meld flavors; mixture will be moist.
  • Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Use a 1/4-cup measuring cup to place 4 mounds of the mixture into the skillet, then gently press each mound to form patties. Cook until both sides are golden brown and the center is no longer pink, about 3-4 minutes per side. Ensure the fritters reach an internal temperature of at least 165°F (74°C) before serving.
  • Transfer fritters to a paper towel-lined plate to drain, keeping them warm. Repeat the process with an additional tablespoon of olive oil and the rest of the chicken mixture. Serve promptly.
