Keto-friendly cheesy chicken parmigiana with almond coating and cauliflower mash - a delicious low-carb twist on a classic comfort food!
Ingredients:
  • 1 egg
  • 80g (2/3 cup) almond meal
  • 40g (1/2 cup) finely grated parmesan
  • 40.00 ml finely chopped fresh continental parsley, plus extra to serve
  • 4 x (about 125g each) chicken breast schnitzels (uncrumbed)
  • Extra virgin olive oil, to shallow fry, plus extra to drizzle
  • 80ml (1/3 cup) tomato pasta sauce
  • 4 slices smoked ham
  • 50g (1/2 cup) coarsely grated fresh mozzarella
  • 1.1kg (1 head) cauliflower, trimmed, cut into florets
  • 25g butter
  • 125ml (1/2 cup) thickened cream
  • White pepper, to season
  • 20.00 ml chopped fresh chives, optional
Instructions:
  • Whisk the egg gently in a shallow bowl. Mix together the almond meal, parmesan, and parsley on a plate. Season the chicken. Dip each chicken piece in the egg, then coat it with the almond meal mixture, pressing gently. Place the coated chicken on a lined tray. Repeat with the rest of the chicken pieces. Chill in the fridge for 30 minutes before cooking.
  • To make the puree, boil cauliflower in a saucepan until tender, about 15 - 20 minutes. Save 1/3 cup of the cooking liquid. Melt butter in the same saucepan, then add cooked cauliflower, cream, and reserved liquid. Simmer for 3 minutes, then blend until smooth using a hand blender. Season with salt and white pepper, and add chives if desired. Set aside covered.
  • - Heat a generous layer of oil in a large, heavy-based frypan over high heat until shimmering. - Sear the chicken in batches for 3 minutes on each side until perfectly crispy and golden. - Discard the baking paper from the tray and place the chicken on it.
  • 1. Preheat the grill to high heat. 2. Spread tomato pasta sauce over each schnitzel. 3. Layer with ham and sprinkle cheese on top. 4. Grill for 3-4 minutes until cheese is golden. 5. Garnish with extra parsley, if desired.
  • Reheat the cauliflower puree over medium heat for 2 minutes, stirring until heated through. Serve with the chicken.
