Tomato & basil soup with tortellini

Whip up this cheesy tortellini tomato soup in just 30 minutes with a handful of basic ingredients.
Ingredients:
  • 2 garlic cloves, thinly sliced
  • 2 x Mutti Whole Peeled Tomatoes 400g
  • 500ml vegetable stock
  • 250g small cheese tortellini, cooked
  • 82.50 ml torn basil leaves
  • 82.50 ml grated parmesan
  • Crusty bread, to serve
Instructions:
  • In a large, deep saucepan over medium heat, sauté garlic in oil for about 1 minute until fragrant.
  • Combine the tomatoes and their juice, stock, and 1 cup (250ml) water in a pot. Bring to a boil, then reduce to a simmer over medium heat for 15 minutes until the tomatoes break down and the mixture resembles a chunky soup. Season to taste.
  • Plate the tortellini evenly among the serving dishes, then generously pour the soup over them. Garnish with fresh basil leaves and a sprinkle of grated parmesan. Accompany with crusty bread for a delightful meal.
