Chunky Tomato-Basil Soup

Whip up a creamy tomato basil soup with fresh ingredients like ripe tomatoes, light cream, onions, and fragrant basil.
Ingredients:
  • 2 tablespoons butter or margarine
  • 1 medium onion, chopped (1/2 cup)
  • 3 small carrots, shredded (1 cup)
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 cup half-and-half
  • 1 jar (26 oz) Muir Glen™ chunky tomato pasta sauce
  • 1 can (14.5 oz) Muir Glen™ diced tomatoes, undrained
  • 1/4 cup chopped fresh basil leaves
Instructions:
  • 1. In a 3-quart saucepan, melt butter over medium-high heat. Saute onion and carrots for 3 to 4 minutes until softened. Stir in flour until moistened. Slowly pour in half-and-half, stirring for about 2 minutes until smooth.
  • Add the rest of the ingredients and stir well. Cover the pot and simmer over medium heat for approximately 15 minutes, stirring often, until the mixture reaches a boil.
  • For added freshness, sprinkle extra chopped basil leaves on top.
