Chunky Tomato Potato Soup

Velvety vegetable soup.
Ingredients:
  • 2 tablespoons butter
  • 2 onions, chopped
  • 4 cups peeled, cubed potatoes
  • 1.5 cups chopped celery
  • 1.5 cups chopped carrots
  • 1 tablespoon Italian seasoning
  • 2 cups milk
  • 1 tablespoon cornstarch
  • 1 (14.5 ounce) can tomatoes
  • 1.25 cups chicken broth
  • 2 tablespoons tomato paste
  • salt and pepper to taste
Instructions:
  • Melt butter in a large saucepan over medium heat. Sauté onions until tender. Add potatoes, celery, carrots, and garlic. Season with Italian seasoning. Gradually pour in milk and stir in cornstarch until it thickens. Add tomatoes, broth, and tomato paste. Bring to a boil, then simmer on low for 20 minutes. Season with salt and pepper to taste.
