Quick and comforting Italian sausage and bean soup with rich tomato broth, fresh herbs, and two bean varieties. Ready in 35 minutes!
Ingredients:
  • 1 pound bulk Italian sausage
  • 0.5 cup chopped onion
  • 1 clove garlic, minced, or more to taste
  • 10 cups beef broth
  • 3 (15 ounce) cans black beans, rinsed and drained
  • 2 (15.5 ounce) cans butter beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1.5 tablespoons minced fresh basil
  • 1.5 teaspoons chopped fresh oregano
  • 2 tablespoons shredded Parmesan cheese, or more to taste
Instructions:
  • In a large saucepan over medium-high heat, brown the sausage with onion and garlic until sausage is crumbly, about 5 to 7 minutes. Discard grease after cooking.
  • Combine broth, black beans, butter beans, diced tomatoes, fresh basil, and oregano in a pot and bring to a gentle simmer. Cover and cook for a minimum of 10 minutes.
  • Top each serving with a generous sprinkle of Parmesan cheese.
