Simply simmer lentils with onions, tomato sauce, and Italian herbs in beef broth for a hearty soup in just 45 minutes.
Ingredients:
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cups beef broth
  • 1 cup dry lentils, rinsed
  • 0.25 cup tomato sauce
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
Instructions:
  • Sauté onions in oil in a large saucepan over medium heat until tender, about 5 minutes. Stir in broth and bring to a boil.
  • Combine the lentils, sauce, and seasoning, then simmer on low heat, covered, for 45 minutes or until lentils are tender. Season with salt and pepper to taste.
