Create a creamy and comforting dish by simmering lentils, wild rice, mixed veggies, milk, and melted American cheese in vegetable stock.
Ingredients:
  • 0.5 cup dry lentils
  • 3 cups water
  • 1 (6 ounce) package uncooked wild rice
  • 1 (14.5 ounce) can vegetable broth
  • 1 (10 ounce) package frozen mixed vegetables
  • 1 cup milk
  • 1.5 cups shredded American cheese
Instructions:
  • Clean and inspect lentils, removing any unwanted debris or damaged lentils.
  • In a medium saucepan, simmer lentils in water until tender for 5 minutes. Cover and let stand for 1 hour. Drain and rinse lentils.
  • Prepare rice in a medium saucepan following the instructions on the package.
  • Simply combine lentils, cooked rice, vegetable broth, frozen mixed vegetables, milk, and American cheese in a medium stock pot. Bring to a boil, then simmer uncovered on low heat for 20 minutes. Garnish as desired.
