Elegant Wild Rice Soup

Decadently rich and comforting winter favorite, quick and delicious.
Ingredients:
  • 1 cup wild rice
  • 3 cups water
  • 6 tablespoons butter
  • 1 tablespoon minced onion
  • 0.5 cup all-purpose flour
  • 3 cups chicken broth
  • 0.75 cup minced cooked ham
  • 0.5 cup shredded carrots
  • 3 tablespoons slivered almonds
  • 1 cup half-and-half
Instructions:
  • Place wild rice and water in a pot and bring to a boil. Once boiling, reduce heat to low, cover the pot, and let it simmer for 45 minutes.
  • In another pot, melt butter over medium heat and cook onions until tender. Stir in flour until smooth, then slowly add chicken broth, stirring constantly until it boils. Lower the heat and add cooked rice, ham, carrots, and almonds. Cook and stir for 5 minutes until heated. Just before serving, mix in half-and-half until well combined.
