Elegant and easy puff pastry triangles filled with savory wild mushrooms and cheese - a must-try for mushroom lovers!
Ingredients:
  • 1 shallot, minced
  • 1 pound assorted wild mushrooms, sliced
  • 2 cloves roasted garlic, minced
  • 1 bunch fresh thyme, leaves stripped and chopped
  • salt and black pepper to taste
  • 0.5 cup heavy cream
  • 1 (17.25 ounce) package frozen puff pastry, thawed
Instructions:
  • Preheat your oven to 400°F.
  • In a large skillet, heat olive oil over medium-high heat. Sauté shallot until tender, about 5 minutes. Reduce heat to medium-low and add mushrooms. Cook until they reduce by half, about 15 minutes. Stir in roasted garlic, Parmesan, thyme, salt, and pepper. Pour in cream, stir well. Remove from heat and let the mushroom mixture cool; it will thicken as it cools.
  • Lay out the pastry sheet on a floured surface and gently roll it out into a 12 x 15 inch square. Cut it into eighteen 3-inch squares. Spoon a generous teaspoon of mushroom filling onto the center of each square. Fold the pastry over the filling to create a triangle shape and use a fork to firmly seal the edges.
  • Bake until perfectly golden brown, then enjoy piping hot or at room temperature.
