Delicious pan-seared duck breasts with a mild flavor. Perfect with wild rice and crusty bread for an elegant meal.
Ingredients:
  • 0.25 cup salt
  • 8 cups water
  • 12 duck breast halves
  • 12 slices bacon
  • 1 (16 ounce) bottle Italian-style salad dressing
  • toothpicks
Instructions:
  • Combine salt and water in a bowl. Reserve 2/3 of the mixture and pour the remainder into a glass baking dish. Submerge the duck in the salt water overnight to eliminate gaminess. Replace the salt water twice, or until mostly clear.
  • The following day, drain the salt water, then generously coat the duck breasts with salad dressing and let them marinate for a minimum of 8 hours.
  • Preheat the oven to 350°F (175°C). Wrap each chicken breast half in a strip of bacon and secure with a toothpick. Arrange the breasts in a 9x13 inch baking dish.
  • Roast until bacon is crispy and duck is fully cooked, about 1 hour.
