Wild Rice and White Bean Medley

15 minute elegant twist on traditional rice and beans for a quick dinner.
Ingredients:
  • 1 can (14 1/2 ounces) vegetable or chicken broth
  • 1 package (6.2 ounces) fast-cooking long-grain and wild rice mix
  • 1 can (15 to 16 ounces) cannellini or great northern beans, rinsed and drained
  • 1 can (8 ounces) sliced water chestnuts, drained
  • 6 medium green onions, sliced (6 tablespoons)
Instructions:
  • Bring the broth and seasoning packet from the rice mix to a boil in a 3-quart saucepan, stirring occasionally, then lower the heat.
  • Add the rice mix and all remaining ingredients to the pot. Cover and let it simmer for about 5 minutes until the rice is tender and the beans are heated through.
