Whip up a cozy turkey and wild rice soup with creamy broth using your holiday leftovers for a comforting meal.
Ingredients:
  • 6 tablespoons butter
  • 0.25 cup diced onion
  • 0.25 cup diced celery
  • 4 cups turkey broth
  • 0.33333334326744 cup shredded carrots
  • 2 cups chopped leftover roasted turkey
  • 2 cups cooked wild rice
  • 0.25 cup chopped slivered almonds
  • 0.5 teaspoon kosher salt, or to taste
  • 0.5 teaspoon ground black pepper, or to taste
  • 0.5 teaspoon lemon juice
  • 0.75 cup half-and-half
Instructions:
  • In a soup pot over medium heat, melt the butter until sizzling. Saute the onion and celery until soft and translucent, for about 5 minutes. Add the flour and cook until it reaches a pale, golden hue, around 3 to 5 minutes. Slowly whisk in the turkey stock until smooth and free of any flour lumps.
  • Combine the carrot into the mixture and gently simmer. Continuously whisk until the stock becomes thick and smooth, and the carrots are tender, around 2 minutes.
  • Combine the turkey, wild rice, almonds, salt, and pepper in the pot and let it simmer for about 5 minutes until everything is heated through.
  • Add the refreshing lemon juice and creamy half-and-half to the soup, heat it until almost boiling, and enjoy while it's hot.
