Cozy up with a flavorful smoked turkey and wild rice soup, packed with veggies for a satisfying meal on chilly days.
Ingredients:
  • 2 smoked turkey legs
  • 8 cups water
  • 4 cubes chicken bouillon (such as Knorr®)
  • 1 onion, quartered
  • 2 stalks celery, chopped
  • 1 small inner stalk of celery with leaves, chopped
  • 1 cup baby carrots, sliced
  • 2 bay leaves
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried marjoram
  • 1 teaspoon curry powder
  • 1 cup uncooked wild rice
  • 1 quart half-and-half
Instructions:
  • In a large soup pot, combine turkey legs with water, bouillon cubes, aromatic vegetables, herbs, and spices. Bring to a boil, then lower the heat and simmer for 30 minutes.
  • Add the wild rice to the soup and let it simmer for a minimum of 1 hour. Take out the turkey legs, shred the meat, chop it, and then add it back into the soup.
  • Gently pour in the half-and-half and heat until it's right below a simmer; simmer on low heat for around 30 minutes.
