Smoke that turkey to perfection!
Ingredients:
  • 1 (12 pound) whole turkey, neck and giblets removed
  • 1 (20 pound) bag high quality charcoal briquettes
  • hickory chips or chunks
Instructions:
  • Add charcoal to the smoker's bottom pan and ignite it. Allow the smoker to reach 240 degrees F (115 degrees C. Apply a light coating of oil to the grate.
  • Rinse the turkey under cold water and gently dry it. Soak hickory chips in water in a pan.
  • - Position the turkey on the grate and add 2 handfuls of damp chips at the beginning of cooking, followed by a handful every few hours. - Maintain the lid on the smoker without peeking to preserve heat. - Smoke the turkey until it reaches an internal temperature of 165 degrees F (74 degrees C) or until the coals burn out.
