Turkey-Wild Rice Salad

Try this vibrant turkey and wild rice salad with crunchy walnuts and sweet berries for a delicious meal!
Ingredients:
  • 1 cup uncooked wild rice
  • 2 1/2 cups water
  • 1 lb uncooked turkey breast slices, about 1/4 inch thick
  • 1/4 teaspoon seasoned salt
  • 1/4 teaspoon dried marjoram leaves
  • 1/4 cup chopped walnuts
  • 1/4 cup sweetened dried cranberries
  • 4 medium green onions, chopped (1/4 cup)
  • 1/4 teaspoon salt
  • 1/2 cup fresh raspberries
  • 4 large leaf lettuce leaves
  • 1/2 cup raspberry vinaigrette dressing
Instructions:
  • Prepare the wild rice according to package instructions. Drain the cooked wild rice in a colander or strainer and rinse it under cold water for 5 minutes to cool.
  • Season turkey with seasoned salt and marjoram. Heat a 10-inch skillet over medium-high heat and spray with cooking spray. Cook turkey for 4 to 6 minutes, turning once, until cooked through. Cut into 2-inch pieces.
  • Combine cooked wild rice, crunchy walnuts, tart cranberries, savory onions, and a pinch of salt in a large bowl. Gently fold in juicy raspberries.
  • Place lettuce leaves on each plate, then spoon the rice mixture on top. Add warm turkey over the rice and finish with a drizzle of dressing.
